Ice Box Cake

ICE BOX CAKE
5 Banana
1 box of Vanilla Wafers Grounded
3/4 cup unsalted butter
1/2 cup of pecans chopped
2 eggs separated
1 cup of power sugar
1 teaspoon of vanilla (for the custard)
2 -1/2 pints of whip cream (2 cups)
Grease Pan about a 12x14 size (sheet cake pan)


1 Box of Vanilla Wafers Crushed fine (put a few cookies in a bag and using a rolling pin smash them)


Take half of the grounded cookies & flattened them into a greased pan. Make custard by creaming butter, sugar, add egg yolks and beat, add vanilla.


Beat egg whites until stiff. Fold in stiffly beaten egg whites into custard.


After custard is made layer onto cookie crumbs. Next layer chopped pecan nuts.

Place sliced banana's over nuts and lightly sprinkle with sugar. Make whipped cream (whipped cream beats better if the bowl and beaters are very cold)
Layer whip cream over banana's. Add balance of wafers over whip cream and pat down lightly.
Refrigerate over night. Then ENJOY!

Halloween Treats....




Match book style holders for this year Halloween treats. Materials used are all from CupCards to Go kit.
To make the match book I cut a piece of card stock 9" X 4 1/2" and then scored it at 1/2", 4" and 41/2" points.
Fold and decorate. Remember idea can be used for any season as Halloween (candy corns), Christmas ( mints) and Easter (chocolate eggs).
