Fresh Strawberry Pie


Each year I wait for "strawberry time" to make one of my favorite desserts. I would love to share my recipe with you and hope it becomes one of your family favorites.

Fresh Strawberry Pie :
Bottom Layer:
2 cups sliced straberries
1 pastry shell, baked and cooled
Middle Layer:
2 cups halved fresh strawberries, mashed
1 cup sugar
3 tablespoons cornstarch
Top Layer:
2 cups halved fresh strawberries
1 cup whipping cream
2 tablespoons sugar

For bottom layer, placed sliced strawberries in the pie shell.
Middle layer, combine mashed strawberries, sugar and cornstarch in a saucepan. Bring to a boil; cook and stir until mixture is thick and clear. Cool and Pour over bottom layer.
Top Layer: arrange strawberry halves on top of the pie. Add whip cream. ( I generally spread the whip cream all over the top)

This pie looks really yummy. I"m gonna copy that recipe, too and hope for some good strawberries.
